The Estate
The family operation was founded in 1920 by Marcos Muravnik and has been bequeathed from father to son for a few generations. The Muravniks were the first in Argentina to produce golden seedless raisins and later they started a boutique olive oil factory. They also produce dried red tomatoes, dried tomatoes in oil and recently launched a line of beauty creams. Today, the family business is run by Raul, his son Norberto and grandson Javier.

The olive oil is produced from carefully selected olives.
The varieties used are the following: Arbequina (44%), Manzanillas and Frantoio (47%), Arauco or criolla (9%).
The harvest occurs between May 15th-June 15th, which is the optimum maturation period, when 80% of the fruits on the trees have gained a purple color.

The olives are washed with fresh water and the leaves are removed, thus avoiding a bitter taste to the olive oil. Then the olives are put into a mill, becoming a paste. Hydraulic presses extract all the liquid from the paste. The liquid is then decanted, separating the water from the olive oil.
