This
wine is a perfect expression of the Vergisson terroir and
produced from a selection of 80 year
old vineyards on average (En Chatenay, En
Carmentrant, Au Metertière, Aux Vignes Dessus, Les Croux, etc).
All grapes are harvested by hand and collected in cases to avoid
a bad treatment of the grapes. After the pressing and the
racking , the juice is drawn into oak barrels (about 10 % new
oak) and will ferment slowly during the winter.
The wine is round on the palate and elegant on the palate, with
delicate aromas and a perfect structure.

The
wine is produced from 40 year old vines ideally
situated on the south east faced slope near the rock of
Vergisson.
The wine is aged in stainless steel
tanks with a short period in oak barrels.
Bright
golden yellow color. The nose offers floral and stony mineral
aromas. Rich and elegant on the palate with citrus and lemon
flavors, and a nice acidity.
"Good intensity in the nose with well mastered overripe
notes. It has a great texture in the mouth. Rich with a
lingering finish. A good wine with a seductive
aging."

2004

The
vineyard is ideally
situated on a steep, south-faced slope which leads to the rock
of Vergisson. When you scratch the many pebbles of either beige
or pinky color
and the limestone fragments fossilized by its remote submarine
past, you discover a dark ochre earth which remains tender even
under the hot sunshine of the summer. The grapes are harvested
by hand, collected in small cases and thrown directly into the
pressing machine without a prior crushing. Then the grapes are
pressed slowly in a very soft manner. The yielded fat juice will
settle for about 24 hours and then be racked into oak barrels
where they are meant to stay during a slow fermentation process,
its lees being stirred regularly until the next summer.
The wine is long and persistent
in the mouth, harmoniously balanced with very delicate white
flowers aromas,
a concerto of the best Chardonnay flavors, well structured and
great complexity.
