The
Vineyard
Th domaine
is cultivated through organic methods and produces wines
that purely and distinctly reflect the terroir. The Premiers
Crus include: "Narbantons", "Jarrons",
"Serpentières", "Peuillets" and "Les
Clous". The yields are never over 35 hl/ha. The vines are
pruned and, when fully mature, harvested by manual selection. Vinification
involves 75 to 100% destemming, a classic fermentation, pigeage,
racking of the gross lees, 15-18 months in oak (15% new from
Damy).

"This is all cherry, with a silky texture that takes on
more graininess as the tannins emerge. A bit one-dimensional
and burly, but concentrated and long. Needs time to show more
nuance. Best from 2009 through 2018. 800 cases made."

"The 2005 Savigny-les-Beaune Les Narbantons – from
another site that always gives a very structured wine from
Ecard – displays bright cherry aromas backed by wet stone,
cedar and iodine. Saline and firmly tannic on the palate, it
may well have the requisite stuffing and stamina for a decade
of satisfying evolution."

"Cut from fuller if slightly coarser cloth than its stable
mates, Maurice Ecard’s 2005 Savigny-les-Beaune Les Jarrons
offers aromas of smoked meat, nutmeg and cherry. Meaty,
sinewy, densely tannic, and showing a bit of new wood, it
nevertheless displays clear, bright cherry and cranberry fruit
tinged by fruit pit bitterness and spice, and underlain by
rich meat stock and saline mineral notes. This is the cuvee
I’d pick for “last of ...” cellaring, and I expect it
will offer the 12-15 years of positive maturation for which
Ecard wine from this site is justly renowned. As a result of
his ill health and of family disagreements, Maurice Ecard
transferred his estate (through sale and lease) to Vincent
Sauvestre, who trades as a Burgundy negociant under the name
“Bejot” and has indicated an intention of vinifying these
holdings separately in future years. So Maurice’s 2005s –
which were bottled late last Fall – are the last to come
from his hand. If not quite on a par with the quality one
came to associate for many years with the name 'Ecard'”. - Wine

"The 2005 Savigny-les-Beaune Les Serpentières smells of
ripe cherries and their pits, along with green herbs and black
tea. Clear and juicy on the palate, with moderate and refined
tannin, this satisfyingly fruit-filled and subtly smoky Pinot
lacks a bit of complexity, but that may come after 3-5
years."

"The 2005 Savigny-les-Beaune Les Peuillets smells of
black tea, flowers and strawberry preserves. Refined in tannin
and bright in fruit character despite the hint of jam, the
wine offers medium body and a satisfying palate persistence. I
would plan to enjoy it over the next 5-7 years though, as I am
not convinced it has the stamina usually associated with
Ecard’s top vintages from this site."
