The Estate
Corinne Perchaud and her husband Jean-Pierre Grossot began working in the Domaine in 1980, but the estate was originally founded in 1920. They are the third generation of winemakers at this family estate, located in the village of Fleys, in the heart of the Chablis appellation.

The Vineyard
They farm 18 hectares (44.5 acres) of vines: 13 A.O.C. Chablis and 5 hectares Premier Cru. The wines are only tank fermented, except the Fourneaux that gets 25% barrel fermented wine added into the final blend. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.

The Wines 
The wines display perfect Chablis like character of oyster shells, mineral and M-L fermentation in the nose.  They have rich components in the mid-palate, with a long lingering flavor core. Thrilling wines.

"Medium yellow. Complex aromas of grapefruit, Meyer lemon, quinine, ginger and honey. Round and ripe but with firm underlying minerality. Finishes with very good breadth and richness. From a steep site with thin soil. Picked with close to 12% potential alcohol and only slightly chaptalized. This blend was better than either of the components by itself.

(done entirely in stainless steel) Dried fruits, hazelnut, ginger and a whiff of musky, smoky reduction on the nose. Fat and broad but quite dry; this is richer than normal for this cuvee, even massive. Impressively concentrated but I found myself wishing for a bit more mineral cut and grip. A subsequent bottle tasted in New York showed similar mid-palate stuffing but considerably more stony cut, a lively lemony character and a more precise yet equally tactile finish. My score is for this second sample."

This was 12.5% natural alcohol, from a yield below 45 hectoliters per hectare. "

"Pale yellow with a green cast. Pure, high-pitched, ineffable perfume of violet and crushed stone. Dense and lush, with lovely sweet citrus fruit flavors complicated by flowers and minerals. A silky and fine-grained wine of noteworthy finesse-and long on personality. Finishes youthfully taut, dry and classic. This is fatter than the 2007 but boasts excellent acidity and verve. I find more soil than vintage 2006 character here, although they believe that his 2005s generally convey a stronger impression of terroir."
