The Estate
The domaine is located in the hamlet of Le Landreau in Sèvre et Maine, Muscadet's best region of production. The family has been producing wine there for 5 generations, but current owner Guy Bossard defies the prevailing view that organic producers can't make great wine. The estate became organic in 1975, and biodynamic in 1986. Guy Bossard makes his own compost using algae, forest brush and basalt. He produces 3 different cuvees, each masterfully crafted to highlight the expression of the specific soil types.
The Hermine d'Or designation is given to specially selected Cuvées of Muscadet, (tasted blind) that score highly. Hermine d'Or wines are picked for: 
1. Typicity - Trueness to type (no oak here).
2. Ageability - The ability to improve in the bottle.
3. Minerality - Classic feature of wines of this region.
This insignia, Hermine d'Or, is as near a guarantee of quality as can be found in the region.

His vines and winemaking are fully biodynamic. If Burgundy's Domaine Leroy made Muscadet, it would be Domaine de l'Ecu. In the classic 2002 vintage, Bossard offered multiple bottlings based on soil types. His Expression de Granit is all about intense minerality; Expression d'Orthogneiss is spicier, richer and denser. Both need 10 years of age. The prices are absurdly low."

The Vineyard 
Guy Bossard farms 17 hectares (42 acres) entirely using biodynamic methods. The average age of the vines is 45 years.
The wines are fermented "sur lie", on the yeast, to prevent oxidation and impart full flavor and a slight spritz to the finished product.

Fresh, clean and full-bodied, this wine displays a nice minerality on the nose and the palate that reflects the expression of the terroir. Good young but will improve over the 5-7 next years.
A perfect match to fish, seafood and white meats.

"The 2005 Muscadet de Sevre et Maine Sur Lie Expression de Gneiss is the most juicy and effusive of this year’s lot chez Bossard. Dominated already in the nose by elusive scents one can only describe as “mineral,” as well as pungently herbal, this comes to the palate surprisingly broad and full, insistently juicy and refreshing, yet with its acids entirely buffered. Focused citricity and distinctly salty, alkaline, and in my imagination somehow iron-inflected minerals decisively imprint the taste buds. (I count it a further tribute to these wines that they are so much easier to drink than they are to describe!)"

FOOD MATCH:
Muscadet's natural companion might be perfectly fresh oysters on the half shell, unadorned except for lemon. But it goes mighty well with just about all forms of seafood and fish, and was well-matched with a simple dinner of fresh cod baked with white wine and olive oil, parsley and garlic.

"Light gold. Bright, mineral-dominated citrus and green apple aromas are sharpened by dusty mineral and fresh herb notes. Dry and focused, with excellent depth to the ripe tangerine, peach and fresh fig flavors. This is showing more depth and roundness than the Granite bottling today, with more sweetness to the peach and tangerine flavors. Exotic cherry pit and honeycomb notes arrive on the deep, impressively long finish.

"The Orthogneiss is almost identical in color, clear straw with just a touch more yellowish hue. Sadly, the hoped-for comparison of minerality is stymied by an offputting volatile acidity in this bottle, "dusty" and metallic high-toned aromatics that eventually blow off, mostly, to reveal a somewhat more fruit-driven wine, lemon-scented honeydew melons and currants cloaking a stony minerality that's closer to slate than chalk. Singing acidity and intriguing minerality make me want to like the wine, but lingering volatility keeps intruding."

"Green-gold. Pretty floral-laced pear, white peach and quince on the nose, with subtle mineral and lanolin accents. Surprisingly gentle orchard fruit and orange flavors are lifted by an easygoing minerality. Sneaky acidity and mineral tones on the back tighten and focus the flavors through the spicy, long finish. Lingering notes of juicy, fresh peach and floral honey add depth and an impression of richness. A powerful, complex wine that's delicious now but will also reward cellaring.

45% Folle Blanche (Gros-Plant), 25% Chardonnay, 20% Melon de Bourgogne (Muscadet), 10% Cabernet Sauvignon.
Soil: clayey, silicious / Sub-Soil: gneiss & orthogneiss

Grapes for this sparkling cuvée are hand harvested,
pressed lightly for first run juice and fermented "sur lie" at low temperature using indigenous yeasts. The finished still wine is fermented in the bottle for a second time with champagne yeasts. It is then left to age on the lees, or dead yeast, for at least a year before shipping as finished sparkling wine. Its long lasting bubbles are the result of this second fermentation.
Complex, round, fruity and refreshing sparkling with citrus-like flavors and a full, fresh finish that lingers. It is an excellent wine for celebrations and festive meals.
To be consumed over the 2 next years.
