The
Vineyard Manual harvest on parcels that are selected for their low yield (28 hl/ha). Traditional vinification, using entire bunches of grapes. Tank fermentation for 25 days. Pumping over and racking are practiced daily, followed by ageing in 1/3 new oak barrels for three months. |
