The Estate
Jean-
Louis Canto has run the Domaine since 1979. He farms with as little chemical intervention as possible. Ploughing the land and allowing nature to take its course is one of Jean-Louis Canto's primary beliefs. His son Geoffrey works beside him and holds much of the same philosophy of grape cultivation. The production for Châteauneuf-du-Pape Rouge is 5,000 bottles.

The Vineyard
Manual harvest on parcels that are selected for their low yield (28 hl/ha). Traditional vinification, using entire bunches of grapes. Tank fermentation for 25 days.  Pumping over and racking are practiced daily, followed by ageing in 1/3 new oak barrels for three months.

Produced from selected parcels of 70 year old vines planted on sandy soils. Aged 1/3 in small barriques. Candied fruit and cherry aromas of great persistence. Velvety and silky tannins. (118 cases yearly)
