The Estate
Founded in 1932, this Cave Coopérative is located in the top commune of Pomérols, located between the garrigue of Pezenas and the sea dominated by the Mont St Clair in Sete. The co-op has merged with the Cave de Castelmau de Guers. They include 320 members and produce 55,000 hectoliters of wine (600,000 cases).

The Vineyard
The members control 1,200 hectares of vineyard land (2,964 acres) of which 330 hectares (815.1 acres) are Picpoul de Pinet. Six communes are entitled to the name Picpoul de Pinet:
Florensac, Pomerols, Pinet, Castelnau de Guers, Montagnac, Meze. The Pomerols vineyards stretch over vast sun-light terraces with clay/calcareous soils.

Vinification: Skin maceration for a few hours, pneumatic draining and pressing, double cold decanting, temperature controlled fermentation.
100% Picpoul, aka Folle Blanche. Pale yellow color with green tints. Fresh and fine aromas  of grapefruit and exotic fruit. Lime f
lavors, with typical focusing acidity, are hallmarks of Picpoul. Our best value, this wine impresses novices and hardened geeks equally.
Known as “the Muscadet of the South” in France, this is to the Mediterranean coast of France what Albariño is to northwest Spain…the default wine for fresh shellfish & seafood.

"An always-fun pick from one of the more successful co-ops in the south of France. Picpoul is one of the obscure Rhone grapes, and this vintage is crisper than some, but there's enough weight to put it on the dinner table. White peppercorn and a floral lift to tangy, sharp lemon and saline flavors. Remember this label. It delivers."

“Don’t feel bad if you’ve never heard of Picpoul de Pinet.  Despite the fact that the region where these vines grow is the largest white wine producing area in the Languedoc (covering some 3000 acres, or 1300 hectares) Picpoul remains a foreign name to most American consumers.  Part of the reason for that is that it has traditionally been used mainly as a blending grape, but well-made wines such as this one show great potential for the grape.  Absolutely enjoyable and amazingly refreshing thanks to the grapes’ inherent acidity, the wine has a come-hither fragrance and lovely flavors of lime and pears as well as minerality (the vineyards stretch across a limestone plateau at the edge of a vast lagoon).  It’s hard to find any above-average wine in this price range let alone one as bright and charming as this one.”

Here is a wine that delivers the lilt, minerality, and refreshment reminiscent of a Muscadet, dry Riesling, or Jacquerre-based Savoie white, but with relatively low acidity and a soft mouth-feel."

"Run, do not walk, to your favorite retail store or to your computer keyboard and track down the Hugues Beaulieu Picpoul de  Pinet 2007, Coteaux du Languedoc, in the South of France. Produced from white picpoul grapes by a cooperative called Cave de Pomérols, all in stainless steel, the wine offers an amazing rich, spicy savory character. Notes of green apple and pear waft from the glass, with a touch of fig and a hint of honey, though the wine is completely, almost dauntlessly, dry. In the mouth, the texture is smooth and would be close to luxurious if not for the bright blade of acid that makes the wine seem to pulse with animation. Flavors run to roasted lemon and lemon balm with a hint of fig and roasted peach at the core. It takes a few sips, but you quickly realize that the wine exults in pure minerality, like a bell-tone of limestone and oyster shell. And speaking of oyster shells, it’s difficult to imagine a better wine to accompany fresh oysters or grilled shrimp, though we knocked this bottle back, um, I mean sipped it sagaciously, standing in the kitchen nibbling slices of Comté cheese, and it was great like that. Anyway, I’ll rate this wine Very Good+. The price? Are you ready? About $11, or A Bargain of the Ages."

Vinification:
Skin maceration for a few hours, pneumatic press, 24 hrs of decanting, temperature controlled fermentation.
Crystal pale yellow color. This wine combines the cut and bright fruit of a Sancerre with the ripe fruit of the sunny Languedoc. Lemongrass, honeydew and thyme flavors are packed into this dry, unoaked gem.
Perfect match with Saint Jacques scallops and lobsters.
