The Vineyards
In addition to the 250 hectares (618 acres) under vine that it owns,
BCCV also purchases grapes from selected local growers
in the Rueda/La Seca area. The local soils are poor in
organic material with a mix of gravel, limestone and
sandy clay. The elevation (700 meters above sea level)
and harsh castillian climate with long cold winters
and hot dry summers, provide growing conditions for
low yields and quality, well ripened grapes. The Sanz
family are specialists in viticulture, using dozens of
different clones to get the most from varied terrain,
orientation and soil characteristics of their
extensive vineyard acreage.

Mechanically harvested by night, to protect the grapes from
oxidation.
Fermentation takes place in stainless steel tanks at
controlled temperature of 15-16º C for 18 to 20 days long.
Cold stabilization, filtration.
Genuine and intense Sauvignon aromas with character. Pleasant
aromatic complexity full of nuances of tropical fruits such as
litchi, papaya and hay recently cut. Fresh with flowers aromas
lightly vegetal. Very elegant wine.
The palate is powerful and elegant, well balanced with good
acidity while becoming savory and refreshing in middle palate.
The finish and aftertaste is persistent with fruity and
vegetal notes.
This wine will enhance your spicy dishes of fish or poultries
as well as oriental food with coriander.

Palacio de Bornos, Extra Virgin Olive Oil 12/500ml
Made
from 100% Morisca olives grown and processed in Badajoz in
east-central Spain, not far from the border with Portugal. The oil has a bright green/lemony color with pale
yellow tints; a fruity/floral aroma and is full-flavored with
a long, smooth aftertaste.
As is the case for any extra virgin olive oil produced
in Spain, the oil is mechanically processed with no heat or
any other industrial or chemical process other than washing,
decanting and basic filtering.
The Badajoz area boasts some 187,000
hectares of olive groves and is a major production area for
both oil and “Manzanilla” table olives. The region produces about 120,000 tons of
olives. Despite its harsh dry climate, Extremadura is known for
quality food products including wine, fine olive oil,
excellent “pata negra” hams, and some superb creamy
vegetable curdled cheeses like torta del Casar or La Serena.
