100% Chardonnay.
Vinification: An uneventful season with excellent ripening
conditions and cooling nights for great acid and hang time.
Dropped by gravity straight to the press, squeezed directly to
barrel and chilled, inoculated with Chardonnay 3079 yeast,
primary fermentation started and completed in barrel with
secondary fermentation started but not completed, about 25%
malic acid is left in the chardonnay. New and used premier
French oak from Cadus, Damy, Dargaud & Jaegle, Francois
Freres, Louis Latour and Sirugue.

2% Zinfandel, 1% Petit Verdot, 1% Carmenere.
The wine is on 40% new oak, mostly French and American oak
barrels with a compliment of Hungarian oak barrels for 16
months.
Crushed gently and dropped by gravity into small 1.5 ton bins,
cold soaked a minimum of 48 hours, then inoculated with a
variety of yeasts, hand-punched and pressed directly to
barrel, where the wine finishes both primary and secondary
fermentation.
Dried rose petals and a hint of spicy
mocha in the bouquet. The palate is smooth with brambly
berries leading to rich black coffee lingering through to a
cocoa powder and black cherry finish.

Vintage: The arrival of hot conditions in late spring
and early summer was balanced out by cooler temperatures
closer to maturity which helped maintain high natural acidity
levels that balanced flavors for extended hang time.
Tasting notes: Tastes like really, really good red
