Rustic cider is traditional cider, crafted from the best cider apple varietals of the region including York, Stayman Winesap, Jonathan, and other heirlooms. Created with a sense of place and terroir from seasonal growing conditions and native microflora, rustic cider is fermented in raw form with blends of native and cultured yeasts, processed without filtration or chemical additives, and aged on lees in barrels for at least six months.
Cider warmed in the barrel with organic baby ginger and infused with raw blueberry honey. An aromatic cider that's gingerly spicy with notes of tang and tart.
