Rustic cider is traditional cider, crafted from the best cider apple varietals of the region including York, Stayman Winesap, Jonathan, and other heirlooms. Created with a sense of place and terroir from seasonal growing conditions and native microflora, rustic cider is fermented in raw form with blends of native and cultured yeasts, processed without filtration or chemical additives, and aged on lees in barrels for at least six months.
This blend combines 33 different Pre-1860's apple varietals, barrel aged together for over a year. Filled with complexity, this tart, tannic, and slightly funky farmhouse cider is a reincarnation of an era passed.
Heirloom X features dark fruit flavors and apple aromatics from select heirloom cider a pples. A portion of the blend was aged in hogshead Sherry barrels for over 10 months, resulting in rich, tannic cider. Gluten free, vegan.
