Rustic cider is traditional cider, crafted from the best cider apple varietals of the region including York, Stayman Winesap, Jonathan, and other heirlooms. Created with a sense of place and terroir from seasonal growing conditions and native microflora, rustic cider is fermented in raw form with blends of native and cultured yeasts, processed without filtration or chemical additives, and aged on lees in barrels for at least six months.
Crafted to capture the funkadelic rustic basque style, we ferment the fresh juice on apple skins, allowing the native yeast, tannins, and pectins from the skins to influence the primary fermentation before racking and aging Sur Lie. A still style cider, tart, light tannins and with funky farmhouse qualities.
Sidra Americana is dry, tart, and tannic with farmhouse flavors arising from Basque cider making techniques.
Apple juice was fermented on apple skins,capturing complex flavors from native yeast and pectins. Gluten free, vegan.
