To highlight the red fruit of both parents of Pinotage, namely Pinot Noir & Cinsault, fermentation on the skins is slowed by strict temperature control. The extended fermentation period ensures maximum extraction of flavor and color, while working gently with the skins avoids astringent flavors. The wine is aged for 4 - 9 months in French oak for good integration of flavor.
