The Chassagne-Montrachet is of a pure golden yellow color. The nose opens on complex aromas with vanilla, apricot and spicy notes. Mineral and lemony character. Ample and round in the mouth, vanilla flavors and a sweet note of sap. Excellent balance, good power and fine acidity.
Delicious by itself as an aperitif, it also pairs elegantly with meat and fish with a noble and beautiful texture - veal or chicken in white sauce, roasted sea bass, but also foie gras - or grilled seafood cooked with sauce - shrimp, lobster. Excellent with cheeses - Camembert, Brie, Blue cheese, Goat cheese, Gruyere.
"This structured, complex Chardonnay is packed with minerality and considerable weight. The tight texture and almost tannic character will soften over the next few months. Full of potential, it's drinkable now but will be so much better from 2017."
