Average age of vines 25 years.
Traditional vinification. The grapes are pressed upon arrival at the winery. The fermentation takes place in thermo-regulated stainless steel tanks at 16°C.
The wine is aged for 15 months in oak barrels used between 1 and 4 times, with regular stirring.
Perfect with noble seafood (gambas, lobsters, crayfish…) but also with foie gras and white meats with a creamy sauce (veal or poultry). Sushi pairs perfectly with its minerality. Ideal with Goat cheese.
"This is a rounded, ripe and full-bodied wine, with spice and light toastiness that give richness. Apple and green-plum flavors are enhanced by the creamy texture and touches of apricots. It is young and drinkable now, although will likely be much better from the end of 2016."
