The KEERMONT FLEURFONTEIN (‘flower fountain’) derives its name from a beautiful spring on the farm near the Sauvignon Blanc vineyard from which the grapes are sourced. The wine is produced by pinching the stems of the grape bunches while they ripen on the vine. This stops the translocation of fluids into and out of the grapes and allows them to dry naturally. The raisons are harvested a few weeks later and the syrupy juice is squeezed from them with a hard pressing process. The syrup is fermented in Hungarian oak barrels by indigenous yeast and is left to mature for 18 months. Total production of Keermont Fleurfontein 2015 was 2400 bottles. All grapes used in producing this wine were grown on Keermont Vineyards and bottling was carried out by hand without filtration in our winery.
Pure yellow gold in color, the 2015 Fleurfontein exudes vibrant aromas of cut grass, dried apricot, and soft citrus. The palate is full and voluptuous with concentrated flavors of honey, pear, citrus, and almond. A central core of acidity and a hint of new oak give the wine a long complex and focussed finish. Drink now through to 2030.
A cold, wet winter (as experienced in this vintage) is a good thing for the vine. It goes into full dormancy and wakes up well rested and ready for the season ahead. This was apparent with very even budding and strong early growth during spring. From this point onward, we experienced a very dry season. Growing conditions however were ideal with warm days and cool nights. Variation in temperature leads to good flavour and colour development in the berries and as a result we had a small crop with great quality. We had our earliest harvest yet starting on 23 January and finishing on 3 March and took 70 tons of grapes into the winery.
