The grapes for this wine come from 2 famous areas of the Saint Véran appellation: Prissé and Davayé.
Soils: Jurassic. Clay and limestone
Age of the vines : 45 years.
Vines are pruned according to the Mâconnais system, Guyot or Arcure with around 10 buds.
Density: 8,500 vines / ha
Very slow temperature-controlled alcoholic fermentation in stainless steel tanks.
Malolactic fermentation follows. Aged on fine lees during 9 months in vats and partly in barrels. 10% of the wine is aged in oak barrels this year.
Minimum use of SO2.
With a qualitative harvest, minimal and measured interventions while vinifying, so as to preserve wines aromas. Terroir expression is the priority.
Estate bottled in July 2018.
Organic farming since 2003, Ecocert certification since 2010.
Brix or degrees potential at harvest: 13% by volume.
Standard pH: 3.3 or about
Age ability of the wine: drinkable under 3 years for both so as to still have the fruity aromas.
The 2017 vintage
Following a cold, dry and sunny winter, spring came with a rise of temperatures, favorable to the growth of the vines. Then dryness struck all summer long and especially the stony parcels suffered from it. Rain fell on 30th August : too late for the vines impacted by water stress. Nevertheless, this hot weather slowed down the diseases and allowed perfect sanitary conditions. The grape harvest was done early, from 28th august to 8th September, with juices rich with sugar, perfumed and concentrated. To sum up, the weather complications were offset by the team experience, so this vintage is remarkably well done.
Very easy to associate with his very complete balance : grilled fish, creamy risottos, antipasti, salads, sushis, very pleasant at the aperitif.
