This 100 % Pinot Noir from the Waipara Valley of New Zealand is made by Sherwood Estate winery. It's made from clone types D 113, D 777 & UCD 5 (Pommard Clone). The Pommard Clone is the most planted Pinot clone in Oregon and is often responsible for intense red or black fruit aromas.
Average ager of the vines is 15 years.
The fruit was tipped into four tonne open top fermenters, firstly for a seven day pre-ferment soak finally for a ten day post ferment soak. During this time the cap was hand plunged 1-2 times a day. At twenty five days the wine was pressed off skins and transferred to French Oak barriques - 45% new and 55% 2 and 3 year old. Wine went through ML fermentation. After 14 months in barrel the wine was racked, blended, lightly egg white fined and bottled.
