Tanzanite Brut Method Cap Classique
Tanzanite Wines
South Africa - Western Cape - Breede River Valley - Robertson

Fruity, flinty, nutty, honey and creamy notes, along with beautiful brioche tones, come through on the nose.  The Pinot Noir gives the wine good backbone, structure and longevity, while the Chardonnay provides the 'flintiness' which develops into creamy, elegant notes with aging. Dry, lingering and well-structured.

Vinification
Grapes are harvested in whole bunches by hand & pressed through a soft pressing cycle. The must undergoes its first fermentation (temperatures vigorously controlled) to preserve grape aromas. After fermentation each wine are tasted and blended. After blending the wines are stabilized, inoculated with yeast, and bottled. The bottled wine is taken into temperature controlled cellars where secondary fermentation takes place – the so called “prisse de mousse”. The yeast converts the sugar to carbon dioxide and alcohol, creating effervescence. Aging on the lees is crucial to making a good Cap Classique. After riddling and degorgement, the sugar is adjusted by adding dosage according to the wine's taste. The wine is aged a few more months.

gilbert et gaillard international challenge 2020 gold 92 pts medal"Light golden straw. Biscuit and stone fruit on the nose with subtle nuttyness. Fresh and fruit-forward on the palate with a full and creamy aftertaste. A fine mousse and lengthy finish. Lemon drops and lime cordial. A fine wine that will age well."

wa90"A blend of 80% Chardonnay and 20% Pinot Noir, the NV Brut begins with biscuity aromas followed by green apple, citrus blossoms and lees. The palate is focused with precision and finesse and shows that the winemaker has taken a lot of time and effort to create this wine. Bright, energetic acidity livens up the mid-palate, and the mousse is firm with a soft nuttiness from the autolytic characteristic. The finish is long and subtly spicy with and lingers with notes of sweet brioche and cashew butter, as the wine spent two years on the lees. - Anthony Mueller"

iwinereview"This is a richly flavored sparkler showing complex notes of brioche, apple, and a hint of clementine. It’s bone dry on the finish with lingering toasty lees notes. A blend of 80% Chardonnay and 20% Pinot Noir aged 24+ months on the lees. The winemaker is Stellenbosch enology grad Melanie van der Merwe who made sparkling wine for 11 years at Distell before starting her own brand."
