Vinification
Early morning harvest by hand, cluster and berry sorted, destemmed and crushed. 5-day cold soaks, followed by 14 day native fermentation in open-top bins. Never racked prior to bottling. Bottled unfined, unfiltered.
Aging for 20 months in French oak, 30% new.
