Vinification
Machine harvesting in the cool, early morning. Skin contact maceration for several hours, depending on ripeness, and pressing. Beginning of the cold alcoholic fermentation at 12 degrees C and then an increase in temperature to finish the fermentation at 20 degrees C. Ageing on lees in stainless steel tanks.
