"Romaric Chavy makes this wine from a parcel of young vines in Puligny-Montrachet. The first impression is Burgundy—if not specifically Puligny, as the provenance makes sense—with its dry chamomile, clean mineral and richer vanilla scents. That richness expands into toasty notes that last with the fresh, firm chardonnay flavors. Pour it with Epoisses. - J.G.
