Old Tawny ports are a blend of the best wines from different years. The indication of age stated on the label is the average age that makes up the overall blend.
As tawny ports age, they grow lighter in color, as they throw their deposit in the cask rather than in the bottle. The process of racking contributes to the oxidation process whereby the wine's fruit qualities gradually diminish and its nutty characteristics are acquired. The wines drawn from this extensive reserve of aged ports are then carefully blended for balance and continuity of style.
Pairings

This is a delicious dessert wine, and harmonizes particularly well with almonds, berries or dark chocolate. Pairs well with intense cheeses, blue cheese. It is excellent at the end of the meal. Seve slightly cool, especially on warm days.
