Cold soaked overnight. Inoculated with selected yeast. Fermentation temperature was between 24 -26 degrees Celsius. Regular pump-overs were given to enhance color and flavor extraction. Matured in 3rd & 4th fill french oak barrels for 6 - 9 months.
