Vinification
Stainless steel, thermoregulated and computerized vats. Fermentation 45 to 50 days with a final warm steeping (35 degrees C) . Concrete vats equipped with micro-oxygenation system; aged 14 months.
Depending on the vintage and the quality of the harvest, Nicolas might decide to use oak staves to bring toasty notes and complement the fruity flavors of the wine.
