100% Vermentino from 15-year-old vineyards near Manciano (clayey, rich soil) and from 6-year-old vineyards near Pitigliano (tuffaceous soils of volcanic origin). 50% of the grapes are macerated with the skins for 10 days, 50% are vinified in white. Indigenous yeasts. Aged 4 months in cement.
A vibrant Tuscan Vermentino that captures the freshness of its coastal terroir; the fruit comes from dry, breezy vineyards with strong influence from the Mediterranean Sea. The flavor profile is light and refreshing, with notes of lime, green apple, and hints of dried herbs and sea spray lingering on the finish.

The freshness that is obtained from the deep soils of Pitigliano joins the minerality from the stony soils of Manciano; the different origins of the grapes determine an unusual complexity for a Vermentino from Maremma. White fruit and mineral aromas and a refreshing mouthfeel.

Vinification
No irrigation. The harvest is by hand, without sorting table upon arrival, we made the selection during the harvest. The grapes go to the tank destemmed. 30% of the grapes stay on skins for 9 days at a controlled temperature of 22-24°C, the other 70% is in white vinified. spontaneus fermentation, ml fermentation. pump over during the maceration. one racking every 40 days, 3 racking in total during the aging. Aging 4-8 months in cement tanks, 1 month aging in bottle.
