Les Charmes de Daix is produced from 6 different parcels (1 hectare total), planted on clayey soils and chalky rock sub-soils. Half of the vineyards is located in the commune of Daix and provides great finesse, while those from the commune of Gevrey bring structure to the wine. This Bourgogne red is fresh and fruity, elegand and generous, offering an aromatic persistence of red and black fruit aromas. It is well-balanced, with a good structure and a nice finish.

The 100% destemmed grapes are vinified for a fortnight including 2 to 3 days of maceration between 10 and 11°. The alcoholic fermentation starts with native yeasts of the grape. Pigeage is practiced during vinification to extract all the good elements from the grapes. When all the sugar is transformed into alcohol, we proceed to devatting. Once the cuvée is pressed, the wine is stored in vats for 5 months, then transferred to barrels of 2 to 3 wines to refine the aging for another 9 months. The wines are blended, then filtered with kieselguhr before bottling to homogenize the cuvée.
